The Registered Dietitian Nutritionist (RDN) plays a major role in reviewing a menu for nursing homes, group homes, and assisted living facilities. The RDN evaluates the amount of proteins, carbohydrates, vitamins and fibers available in each menu item and makes sure that the menu is well balanced. Then using federal guidelines RDN makes recommendations to the dietary director, and approves a menu after all changes have been made in the menu by a dietary director.
