An RDN evaluates the amount of proteins, carbohydrates, vitamins and fibers available in each menu item to make sure the menu is well balanced. Then using federal guidelines RDN makes recommendations to the dietary director, and approves a menu after all changes have been made in the menu by a dietary director.
